Almond Brittle

Eat it  directly .

 Or crush & sprinkle as a topping to your ice cream

Or add it to your Basic ice cream for a butter scotch flavor

Ingredients:
1/2 cup plain sugar + 3 tbsp water
1/4 tsp unsalted butter 
5 tbsp sliced unskinned almond  or slightly crushed whole almonds
greased tray or I used shiny part of aluminium foil


  1. Put  plain sugar & water together in a pan. 
  2. Cook on medium low heat until dissolved. 
  3. Stirring continously cook till you get the brown caramel color
  4. Add in butter.Mix well
  5. Add in  almond stir for few sec.Remove from the flame .
  6. Pour the prepared mixture on a greased tray or shiny part of aluminium foil.
  7. When cool remove. Now Break into pieces & ground coarsely.
Note:I put the broken pieces into a plastic bag & pounded it with rolling pin.

Grilled with capsicum, onions & tomatoes

Served in a platter with tahini yogurt dip & fries

Serves  2 -3
Ingredients

For the Marination:
500 gm chicken breast cut into cubes
1/2 tsp red chilly powder
1/4 tsp turmeric powder
1/4 tsp coriander powder
1 1/2 tsp of tomato paste
1 tbsp salt
juice of 2 oranges
1/2 tbsp olive oil

More oil for basting while grilling about 2 -3 tbsp.
Capsicum , onion & tomato cut into cubes
8 small size bamboo sticks or 4 long sticks

To Serve:(OPT) Potato Fries,olives & Tahini Yogurt Dip

Method:

  1. Marinate the chicken with marination ingredients. Keep aside for minimum 30 minutes.
  2. Cut tomato,onion & capsicum into cubes
  3. Insert the onion, tomato,capsicum & chicken on the stick. Repeat the same order till the bamboo stick is full.
  4. Grill on a preheated oven @ 180 C for 45 minutes or till done.
  5. Serve with Tahini yogurt dip, fries & olives

Strawberry Coffee Cake

Accidental Cakes. This is what I call them

Ingredients:
100 gm plain flour
1tsp Baking powder
120 gm sugar + 2 tbsp + 3 tbsp sugar for the the crumble
1 tbsp  + 1 tsp vanilla extract
75 gm unsalted butter + 1 tbsp butter (chilled)
1/4 tsp salt
1 cup fresh or frozen strawberries (I used frozen)
1/4 cup milk
2 tbsp ground almonds (opt)
Icing sugar to dust (Opt)

Method:

  1. Line the bottom of 7″ inch spring form pan with parchment paper. And grease the sides with butter  & flour
  2. Preheat the oven to 200 degrees.
  3. Mix in together 3 tbsp sugar , 1 tsp vanilla and 1 tbsp chilled butter till it form crumbs. Refrigerate. 
  4. Place strawberries with 2 tbsp sugar in a food processor. Use the chopper blade. Pulse 3 times. We want the chunky pcs not the puree.Refrigerate.
  5. Sieve & mix together flour , BP & salt
  6. Now we will start making the batter. Start by beating the butter & sugar till light & pale.
  7. Mix in vanilla extract.
  8. Add the eggs alternating with the flour. Scrape down the sides of the mixing bowl from time to time.
  9. Add in the milk until combined.
Assembling & Baking:
  1. Pour a thin layer of the batter  on the greased pan.
  2. Spread the prepared strawberries leaving 1/2 inch from the sides.
  3. Pour over the remaining batter in dollops
  4. Now sprinkle the prepared sugar topping with ground almonds.
  5. Bake for 45 minutes @ 200 degrees.Insert the toothpick to check.
  6. Let it cool in the pan for 10 minutes before removing from the tin.
  7. Sprinkle icing sugar (optional) before serving.
