I
100 gms  butter
80 gms plain flour
20 gms almond flour
3 eggs
110 gms sugar
1 tsp vanilla essence
1/2 tsp BP
1/2 cup milk

II
1/3 cup cherries cut into 2 pcs
1/3 cup slice almond

Method:

  1. Preheat the oven.
  2. Grease the loaf pan.
  3. Mix all no I ingredients(butter,flours,eggs,sugar,vanilla,BP,milk)  till combined
  4. Pour on the greased pan.
  5. Sprinkle cherries & slice almond on the top
  6. Bake @ 180 degrees for 10 -15 min till done. Or insert toothpick. If it comes out clear it is done.
  7. Perfect tea time cake.

NEW YORK STYLE PIZZA – BP Challenge

Who does’t love pizza?

I have not come across anybody who says no to pizza.

This month our Baking Partners Challenge was New york Style Pizza.We are given three recipes to choose from. I chose NEW YORK STYLE PIZZA suggested by Archana as I had not ever tried thin crust before.

Now to the recipe.

I. For Pizza base (Thin Crust)– 2 nos six inches base.

Ingredients:
2 1/4 cups all purpose flour, plus more for dusting

    3/4 tablespoons sugar
    1 1/2 tsp sea salt
    1 tsp instant yeast
    2 tbsp extra-virgin olive oil
    3/4 cup lukewarm water


  • Method:
  • 1. In food processor combine flour, sugar, salt, & yeast and pulse until all mixed. Prepare the dough by adding olive oil & water. 
  • 2. Now transfer dough ball to lightly floured surface and knead once or twice by hand till it  passes the windowpane test. Place in refrigerator and allow to rise at least one day or up to 5 days.
  • 3. Baking Time :
  •   Remove dough at least two hours before baking from refrigerator and shape into two  balls by gathering dough towards bottom and pinching shut.Now  place each one in a separate medium mixing bowl. Cover tightly with plastic wrap & allow to rise at warm room temperature until roughly doubled in volume.
  • 4. Preheat oven to maximum temperature. Turn single dough ball out onto lightly flour surface. Gently press out dough into rough 8-inch circle, leaving outer 1-inch higher than the rest. Gently stretch dough by draping over knuckles into a 6 -7 inch circle about 1/4-inch thick. Transfer to pizza peel.
  • II. New york style pizza sauce 
  • Ingredients:

    1cup fresh tomatoes rough sliced
    1/2 tbsp olive oil
    1/2 tbsp butter
    2 garlic cloves chopped
    1/2 tsp dried oregano
    2 pinch red pepper flakes
    sea salt
    1 medium onion, sliced in moon shape
    1 teaspoon sugar
    Method:
    1. In a food mill  roughly process fresh tomatoes until pureed but not completely smooth. 
    2.In a pan heat butter and oil low heat. Add garlic, oregano, pepper flakes, and large pinch salt until fragrant but not browned. Add tomatoes, onion &  sugar. Bring to a simmer, reducing the  heat to lowest stirring occasionally, until reduced by 1/2 quantity.This will take about 1 hour. Adjust the salt according to your taste.

  • III.Pizza topping
  • 1 cup mozzarella shredded
    1 cup boiled chicken ( I used leftover chicken bhuna , shredded it & used)
    1 sliced capsicum
    1 sliced onion rings
    jalapeno peppers


Assembling Pizza
  1. Preaheat the oven to maximum temperature.
  2. Spread 1/2 of the sauce evenly over surface of pizza crust, leaving 1/2 to 1-inch border along edge.
  3. Spread the shredded chicken, capsicum, onion ring, jalapeno & lastly grated mozzarella.
  4. Slide pizza on to the tray & bake for 15 – 20 minutes till cheese has melted & edges are light brown.

Murg Qalia

Murg Qalia is a special curry type from the region of Gujarat consumed by muslim community. Served with Naan, this curry is made during festive occasions.

Qaliya is type of curry made with Meat or chicken.This is a special curry of Gujarat & consumed with Naan.
Murg Qalia can also be served with pav or bread, depending on individual taste.

Ingredients & Method

I
500gm chicken
1/2 cup oil
1 tbsp ginger garlic paste.
Whole garam Masala ( 1 black cardamom, 3 pepper corn, 2 cloves, 1/2″ cinamon)
2 tsp chopped coriander

II. Grind to a paste 1 tomato + 2 tbsp curd

III
1 large onion Birasta (Check Note below) grinded  with enough water to form a paste

IV.  Prepare all the masala with 1/4 cup water
1/4 tsp turmeric
1/2 tsp red chilly powder
1  tsp coriander powder
1 tsp salt (Adjust to taste)
1/2 tsp garam masala powder
1 glass water

 

Method

  1. Heat oil in a pan ( can use the same oil in which onion were fried*)
  2. Add in whole garam masala.
  3. When it crackles add in ginger garlic paste. Fry till the smell vanishes.
  4. Now add in masala paste (IV). Fry for few secs
  5. Add in chicken & fry for few minutes till it releases its juices ( approx 2 min)
  6. Now goes in birasta paste (III).Fry for few minutes
  7. Add in tomato curd mixture (II). Cook till oil get separated.
  8. Lastly add chopped coriander & a glass of water.
  9. Cover & cook till chicken is tender.
  10. The consistency of this gravy is thin as it is eaten with Naan.

* BIRASTA (Browned Onion):
Slice the onions in moon shape. Add it in hot oil till light brown. Drain & keep it on a kitchen towel. When cool it is crisp. Can be stored for a month in fridge .Use as required.

Tip: For Crispier Onion add some salt at the time of frying.
