Dahi Vada is a deep fried spongy lentil dumplings soaked in flavored yogurt & sprinkled with spices. It is a delicious starter to a meal.

Few years back, on my visit to India my sister complained why does she gets hard center in the Dahi Vada though she follows the same procedure & method. I smiled & told her, I had gone through this phase too. My perfect spongy soft badas started coming hard with  ball like center.
 In India, I never had to worry but prepare the batter, mix, fry and soak in the curd and they are ready to eat.  But after coming to Dubai, I don’t know what happened and vadas started hardening in the center. Maybe a climate change or there is something wrong with urad dal I use. I also  asked my sis in law whether she is having the same issue or is it me. Whether I was doing something wrong. But no we were following the same method & procedure.

These are the quick Dinner Rolls which goes well with any Indian curry & also  a delicious accompaniment to masala chai Dnner RollsRamadan Kareem to all the readers of Gheza-e- Shiriin. Hope this Ramadan brings peace & calmness  in our life and helps to overcome the hurdles of life.   I have been MIA from this place as thing were going on a quite fast pace at my personal end. Life now and then throws so many hurdles that sometimes it becomes difficult to cope up. Alhamdolilha now things are in control but there is always a thought in my mind of the uncertainties of life. This melt in mouth Chicken Laziz Kofta  are slow cooked in green gravy and tempered with freshly cut fenugreek leaves and garlic. Leaves a succulent taste to one’s taste buds.

These preps gives me an idea about the different way I can prepare a dish.  I usually buy 2 packets of fresh Chicken breast at a time    to prepare variety of tikkas  like tandoori, shashlik, achari and so on. A part of it is also used to prepare  chicken koftas.  It makes life easy. Specially for light dinner. Grill, wrap in pita or paratha or roti and dinner is ready.
