Eid Mubarak to you all. I am pretty sure  every house must be busy  in preparations for the festivities. I have beautiful memories of Eid back home in India. To say it was a golden period would be much better as I don’t remember spending eid with a huge celebrations and fervor after my parent’s death. Eid was a huge family affair for us .The festivities would start from the sighting of the moon. After Iftar me & my cousins would rush to the terrace competing who find the moon first.  The greeting of Chand Mubarak  were exchanged and the preparations for the eid would begin. Cleaning, changing the drapes & menu for the next day would be finalized. Early morning we would wake up to the aromas of Sheer Khurma being prepared by Ammi. And then all the men would eat  Sheer Khurma before leaving for prayers. Once the men left for prayers, all the women & kids dressed in our best attire would gather in a family hall for our eid prayers lead by my Ammi. The men would start returning from masajid & greeting would be exchanged   with demands of Eidi.

 Stove Top Chocolate Swiss Roll – a delicately flavored chocolate roll with filling of cream & Raspberry conserve. No Sugar, no butter or oil

Yes, you have read it correctly. There is no butter nor oil in this recipe. And top of it no sugar. It looks beautiful.  I have fallen in love with this picture and with this roll. Lol. I am totally going nuts over this Stove Top Chocolate Swiss Roll . And I can promise , you will be too. This is my second version of Swiss roll. The first one was vanilla swiss roll with strawberry filling. You can find the recipe here.

Chicken Ki Shami

Chicken Ki Shami is a poultry version of the shami kebabs. Easily freezable, this recipe is simple , easy & delicious.

Chicken Ki Shami

For Chicken Ki Shami you will need:

(I)

  • 500 gm Chicken
  • 2 tbsp ginger garlic paste
  • 5 tbsp Chana Dal (soaked for an hour)
  • 1/2 tsp black cumin(Shah jeera)
  • 6 to 7 whole red chilly
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 1/2 cup water

Step 1

  1. Boil the chicken with all the above ingredients in a pressure cooker for 3 to 4 whistles.
  2. When done, cook  till all the extra water has dried up. Cool
  3. In a food processor jar with chopper bladder, process the chicken mix to paste.
  4. Remove in a bowl and move to next step

CHUTNEY 

  1. Imli Khajoor Chutney
  2. Green  coriander Chutney
  3. Laal Chutney
  4. Mint chutney
  5. Pulao Wali Chutney
  6. Mango Chutney
  7. Mango jam
  8. Tahini Dip

CONSERVE / POWDER FOR SHARBAT/MILKSHAKES

  1. Shikanji Ka Masala
  2. Cold Coco Mix
  3.  Strawberry  Cardamom Conserve
  4. Dry Fruit Powder
  5. Talbina Mix

ESSENTIAL MASALA & OTHER BASIC STUFF

  1. Ginger Garlic Paste
  2. Onion paste – Peel & Slice onion roughly. Grind to paste. Stores well for 15 days in refrigerator.
  3. Birasta ( Brown Onions)
  4. Garam Masala
  5. Thanda  Masala
  6. Dahi Bade ka Masala
  7. Thecha – Green Chilly Paste
  8. Angara Masala
  9. Achari Masala
  10. Roasted Milk Powder (an alternate to khoya) : On a low flame, dry roast milk powder to light brown. It gives a nutty aroma to the dessert . And is a good substiture for Khoya.
  11. Bread Crumbs :- Crumble fresh bread and keep it covered at room temperature for a day or two. Grind coarsely. Store in a glass bottle at room temperature. You can season the crumbs with herbs too
