Cherry Almond Tea Cake

100 gms butter
80 gms plain flour
20 gms almond flour
3 eggs
110 gms sugar
1 tsp vanilla essence
1/2 tsp BP
1/2 cup milk

1/3 cup cherries cut into 2 pcs
1/3 cup slice almond
Method:
- Preheat the oven.
- Grease the loaf pan.
- Mix all no I ingredients(butter,flours,eggs,sugar,vanilla,BP,milk) till combined
- Pour on the greased pan.
- Sprinkle cherries & slice almond on the top
- Bake @ 180 degrees for 10 -15 min till done. Or insert toothpick. If it comes out clear it is done.
- Perfect tea time cake.
Strawberry Coffee Cake

Ingredients:
100 gm plain flour
1tsp Baking powder
120 gm sugar + 2 tbsp + 3 tbsp sugar for the the crumble
1 tbsp + 1 tsp vanilla extract
75 gm unsalted butter + 1 tbsp butter (chilled)
1/4 tsp salt
1 cup fresh or frozen strawberries (I used frozen)
1/4 cup milk
2 tbsp ground almonds (opt)
Icing sugar to dust (Opt)
Method:
- Line the bottom of 7″ inch spring form pan with parchment paper. And grease the sides with butter & flour
- Preheat the oven to 200 degrees.
- Mix in together 3 tbsp sugar , 1 tsp vanilla and 1 tbsp chilled butter till it form crumbs. Refrigerate.
- Place strawberries with 2 tbsp sugar in a food processor. Use the chopper blade. Pulse 3 times. We want the chunky pcs not the puree.Refrigerate.
- Sieve & mix together flour , BP & salt
- Now we will start making the batter. Start by beating the butter & sugar till light & pale.
- Mix in vanilla extract.
- Add the eggs alternating with the flour. Scrape down the sides of the mixing bowl from time to time.
- Add in the milk until combined.
- Pour a thin layer of the batter on the greased pan.
- Spread the prepared strawberries leaving 1/2 inch from the sides.
- Pour over the remaining batter in dollops
- Now sprinkle the prepared sugar topping with ground almonds.
- Bake for 45 minutes @ 200 degrees.Insert the toothpick to check.
- Let it cool in the pan for 10 minutes before removing from the tin.
- Sprinkle icing sugar (optional) before serving.
Minty Egg yolk croquettes

Serving 4
4 egg yolk
Hot Water for steaming the yolk
1 egg whipped for coating
Seasoning:
1/2 cup Bread crumb
Few sprigs of chopped mint , sea salt to taste, 1/2 tsp black pepper powder, 1/2 tsp red chilly flakes
Oil for frying
Chopped mint for garnishing
Method:
STEP 1:
Boil water in a deep pan. When it starts boiling lower the flame to lowest. Now slide over the single yolk in the simmering water. Count to 10 and remove it from the water. You will notice a thin skin has formed on the outer part of yolk.
Take it out very delicately. Repeat the process with remaining 3 yolks.
STEP 2:
Prepare the seasoning by mixing bread crumbs with chopped mint, sea salt, black pepper powder & chilly flakes.
Whip the egg.
STEP 3:
Coat the prepared yolk in the egg and then with seasoning. Deep fry it.
