Stir Fried Vegetables

WHAT TO COOK?? 


 There are days when I stare at my fridge looking for answers what to cook. Yesterday was the one of them.

My fridge stared back with 3 pcs of cauli-flowerets, tomato, 1 big potato, 1 small capsicum &  2 brinjals .Freezer stocked with frozen peas.

Two minutes already gone.O.k thought to sum up all of them and make a fry in 10 minutes. To be served with roti. 

Ingredients:-

3 pcs of cauli flowerets
1 capsicum cubed
2 brinjals sliced
1 big potato sliced
1/4 cup frozen or fresh peas
1 onion cubed
1 tomato cubed (pulp removed)
1 tsp  red chilly powder 
1 tsp coriander powder
1/4 tsp tumeric powder
3 pinch amchur powder
1/2 tsp salt
oil for deep frying 
2tbsp oil
1/2 cup chopped coriander leaves
2-3 green chillies sliced

Method:
  1. Deep fry cauliflower, Potato & Brinjal  OR  Mix in 1 tbsp oil & grill them in oven at 170 degrees  for 5 -6 minutes
  2. Heat 2 tbsp oil in a wok(Kadai or deep pan) . When oil is hot add in all the vegetables
  3. Mix in tumeric, salt, red chilly powder & coriander powder.
  4. After adding all the dry masala, stir well.Then add amchur powder (dry mango powder).
  5. Now add in cubed onion, capsicum & tomato. 
  6. Mix all the above on medium flame till all the masala has coated on the vegetables.
  7. Add chopped coriander serve hot with roti

Potato PARATHA

Servings :4 – 5 Parathas

INGREDIENTS:-

Basic Potato Mixture  1 recipe (Divided into 4-5 portions)
Dough made from 2 cups whole wheat flour and water.
4-5 tbsp whole wheat flour for dusting.
4 tbsp oil for frying.

Knead a soft Dough using 2 cups whole wheat flour +Salt & water.Rest for 5 minutes.
Then Divide  into 4-5 pieces

Taking one piece , roll into 3 inches diameter

Put a potato mixture on the rolled roti


Taking the edge of the roti, bring together to form the roll. Flatten a little by putting little pressure of your hands.

Using dry whole wheat flour roll in 1/2 inch thick and   5  inches diameter paratha

Put the prepared paratha on a hot girdle (Tava)
When done from one side turn over
Using 1 tsp oil fry on both the sides
Fry till it is crisp f & brown from both sides


Serve hot with green chutney & curd
