PREPARING CARAMEL FOR CARAMEL PUDDING

The difficulties faced during making caramel sauce are well known. Many of my friends always  ask how to prepare a perfect caramel for caramel pudding.So here it is.Step by step.First please don’t multitask. We women have a habit of multitasking. CONCENTRATE ON MAKING CARAMEL ONLYYYYYY.Though my  post is for preparing simple caramel. But I feel the more  information you have about a particular recipe, It will help to understand the solution of the difficulties faced while preparing the recipe



Ingredients:-

Sugar  4 tbsp             water 1tbsp only

In a aluminum vessel or pan  add sugar and water.
Put the vessel on a medium heat first. You can see it is changing its color
 
Slow the gas flame to its LOWEST POINT. This is a very crucial stage. Cook till u need your  desired color
 
I don’t like my caramel too brown. 

NOTE: I prepare my caramel sauce in the same pan which can be further used to   prepare caramel pudding.

This cupcakes is made using simple ingredients available in the kitchen. My family and friends love this cupcakes. It can be eaten with or without icing. 
I will be using this basic cupcake recipe for various icings, which will be posted time to time.
Here we are using almonds and strawberries. Almonds give a nutty flavour to it. It can be served warm or cold at tea time or any time.




Serving:- 12 -14 cupcakes


Ingredients:-

100gm self raising flour
100gm Amul Butter (See Note at the bottom)
100gm sugar
2 eggs
2 tbsp warm milk

Sliced Almond, candied strawberries, cherries (Opt)


  • Beat together butter and sugar till light and fluffy

  • Beat in the eggs and vanilla essence.




  • Now fold in Flour and milk.
  • Fold in chopped cherries or strawberries (optional)

  • Pour one scoop of prepared mixture into the paper cups.Sprinkle almond slice on the top (optional).
    Bake at 175 degrees for 10-15 minutes depending on your oven temperature.



    To check if cupcake is ready:- 

    • Insert the tooth pick. If it come out clean, cupcake is ready
    • Touch the cupcake, if it springs back it is ready.

    NOTE:- 
     Amul butter is brand from India. It has salt in it. It gives a nice taste to the cupcakes.But not to worry if it is not available. Using plain butter + 2 pinch of salt will give the same result.
