Whole Wheat Chocolate Banana Cake, a super moist healthy cake made using jaggery as a sweetener.
So , I have been experimenting with flours. Specially the flours used in my household. Wholewheat, Bajra, Jowar. Though there are many others. But these three flours are consumed mostly at my place. I am trying my hand at crackers, biscuits and cakes
It’s been a while, I have started using Wheat flour for my cakes and bread. And it was like returning to basics of baking. And experiment how this and that works. For a cake , my first priority was moistness. And to see that the cake doesn’t dry up. Well read quite a few articles and recipes. Some recipes used a combination of all purpose flour & whole wheat. The one thing , that made sense was the article by Kitchn. Resting the batter & hydration are an important step while using whole wheat flour. I had used this method while making the bread. Now it was time to experiment with the cakes. And so I did with Whole Wheat Chocolate Banana Cake
This is an eggless cake and based on my basic cake recipe. Simple method of dry mix and wet mix. Prepare both the mix. And later fold in together. Before mixing both, start the process of preheating the oven. So you get at least 5 minute time to rest your batter. Temperature is about 175 degrees for 25 minutes and you are done.
