Kulfa- A Desi Ice Cream is a delicious no cook ice cream. Known as Kulfa in pakistan, this is a version of our Indian Kulfi.

It’s peak of summers  here. And the craving of chilled beverages and ice cream is on high. But the thought of entering for long hours in the kitchen in summers keeps me off cooking. Summers are the time, when we go for simple & light dishes with minimum time spent.

 K loves desserts and after each meal, his one and only question is , Aaj meethe mein kya hai? (what is for dessert today). Though I have halwa stocked up in my fridge.  But his fundas of desserts are somewhat like. Today I had a heavy lunch, so I cannot have any halwa. What else you can give me. That means, time for some cold dessert. Well that’s my hubs for you.

I was introduced to Kulfa- A Desi Ice Cream by my lovely neighbor Zulekha Aunty. A beautiful soul in and out. It’s been few years now she has returned back to her homeland Pakistan.  I had this Kulfa at her place. And now it has been a regular Summer Delight at mine. I asked her the reason why it’s called Kulfa, as the taste is very similar to our Kulfi. She said , kulfa is served in slices and kulfi with stick so the difference.

Ingredients

  • 250 ml Cream
  • 250 ml Evaporated Milk (Check Note)
  • 1 tin Condense Milk (400 gm)
  • 3 bread (sides removed)
  • 4 Cardamom crushed
  • Few threads of Saffron
  • 7 to 8 sliced almonds

Instructions

  1. In a mixer jar add cream, evaporated milk, condense milk, bread & cardamom
  2. Pulse two three times so everything gets mixed.
  3. Pour the prepared mix in aluminium ice cream tray.
  4. Add the crushed saffron & give it a stir.
  5. Top it up with sliced almonds
  6. Cover tightly with aluminium foil and freeze overnight.
  7. Next day, remove from freezer. And keep aside for 5 minutes.
  8. Later unmould , Slice & Serve

Notes

Evaporated Milk: We get evaporated milk in tins here. If not available in your region then option is to reduce 1 litre milk to 250 ml. Cool and use it in the recipe.
