I know ramadan is over and I am still on Ramadan mode. Well as said before, I publish most of my post along with recipes and videos on my Instagram handle first and later it comes to a blog. I love it but as I said I am lazy.
I make lot of desserts during Ramadan. And each day is a new dessert. Except two or three desserts, none of it is repeated. And most of the desserts I know are made in the month of Ramadan. K has started telling me, you make this only in Ramadan and rest of the year is like a dry with the exception of few sweets. And it is true. I have nothing to say in my defense. In reality , when you are responsible for iftar to few people, you try to give them best.
Today’s recipe is Sevaiyon Ka Zarda . This zarda is simple to prepare, if you take the measurements properly. The measurements play a very important role for that khila hua zarda ( meaning each thread of vermicelli is separate) .

Ingredients
- 60 gm sevai/vermicelli
- 2 tbsp ghee
- 6 tbsp sugar
- 250 ml water
- 2 cardamom crushed
- Pinch of saffron
- 1/4 cup mixed nuts
Instructions
- Heat ghee in a heavy bottom pan.
- Roast sevai and later the nuts .
- Add water , sugar, cardamom & saffron.
- Cover & Cook on a medium flame till all the water has absorbed.
- Once little warm fluff it up with the fork.
- Serve Warm
