Chicken Ki Shami is a poultry version of the shami kebabs. Easily freezable, this recipe is simple , easy & delicious.
For Chicken Ki Shami you will need:
(I)
- 500 gm Chicken
- 2 tbsp ginger garlic paste
- 5 tbsp Chana Dal (soaked for an hour)
- 1/2 tsp black cumin(Shah jeera)
- 6 to 7 whole red chilly
- 1/2 tsp garam masala powder
- Salt to taste
- 1/2 cup water
Step 1
- Boil the chicken with all the above ingredients in a pressure cooker for 3 to 4 whistles.
- When done, cook till all the extra water has dried up. Cool
- In a food processor jar with chopper bladder, process the chicken mix to paste.
- Remove in a bowl and move to next step
(II)
- 2 large onion chopped
- 4 tbsp coriander chopped
- 4 tbsp mint chopped
- 3 green chilly chopped
Step 2
- Add all the above ingredients to the chicken paste.
- Mix till combined.
- Make a little dent in middle of the mix for next step
Step 3
- Piece of coal
- 1 tsp ghee
- Heat the coal on a gas flame.
- When red add it to the chicken mix. And pour over ghee
- Cover quickly with a lid and place a heavy thing so the smoke remains inside.
- After 10 minutes remove the coal & make 45 small patties.
Frying:
- Shallow fry the patties on a non stick pan till brown on both sides
- Or Dip in egg and shallow fry.
- Serve hot with lemon slices & chopped onion, green chutney.
Storing Instructions
- Place the patties in a tray an inch apart and freeze for 2 hours.
- Later store in an aluminium container.
- Can be stored up to a month.
