We love broccoli in our stir fries with a crunch. On my last visit to farmer’s market, I bought lot of veggies. It seems a long time back though. Dreaming for normalcy to come back. So few days later we had a semi lock down followed by total lockdown kind of situation in our city too. I tried to finish off my most perishable veggies first, and this two florets of broccoli were left hidden under the vegetable basket. It had started turning a bit of yellow and wilted. As I said we love our broccoli crunchy so using it in stir fries was out of question
And I am completely against at wasting of food. As we believe , one is answerable for each of it’s deed in the eyes of almighty. And there is so much wastage of food around the world. When you see many people in hunger specially in these times. It wrenches my heart thinking about it. We are doing our part to help in whatever we can. May Allah and his Rasool make things easy for us all. Specially the one who are in need.
Broccoli Patties is a mix of broccoli & potatoes with spices. To make it non vegetarian, shredded chicken can also be added. With the adjustment of half the amount of potato used with chicken. As I did not have chicken in stock, I omitted it. This recipe can easily be doubled as I have given measurements in cups. Few of the patties were eaten with garlic tahini dip and also added to our mini burgers. Hope you try this recipe and enjoy this patties as we did.

Ingredients
- 1 cup finely chopped broccoli
- 1/2 cup boiled potatoes (mashed)
- 1 slice of bread crumbled
- 3 mint leaves
- 2 tbsp oil/ghee
- 1/2 tsp ginger garlic paste
- 3 tbsp chopped onion
- 1 finely chopped green chilly
- 1/4 tsp turmeric
- 1/2 tsp red chilly powder
- 1/2 tsp chat masala
- salt to taste
- 1 tsp cornflour + 1/2 cup water
- Bread crumbs to roll the patties
- Oil for Shallow frying
Instructions
- Heat the oil in a pan. Add ginger garlic. Saute for few seconds
- Add the chopped onion & green chilly. Saute till onion is soft
- Add in broccoli, chilly powder, turmeric, salt & cook for few minutes so all water is dried.
- Switch of the flame & add mashed potato, mint leaves & crumbled bread ( wet the bread little & crush)
- Mix all & make 8 small size patties.
- Now dip the patties in cornflour mix and then roll in bread crumb.
- Shallow fry or bake till brown.
- Serve with sauce or any dip.
