Gond Ka Halwa / Indian Gum Halwa is a winter delicacy from the state of Gujarat. Flavored with hot spices like ginger powder and nutmeg, this halwa give a feeling of warmth on cold days.
Since the death of my parents , the month of December & January have become very gloomy each year. Though its been few years since their death, but these months remind me of the days when their health turned from bad to worse. The pain intensifies within me waiting some bad thing to happen. With passing years, I have come to realize that one may be of whatever age, we will always miss the love & warmth provided by our parents. I pray to allah and his rasool to provide me with sabr during these days and keep me away from bad thoughts.
Gond Ka Halwa / Indian Gum Halwa which I am sharing today is one of my mother special recipe. It had been my college days and we used to stand side by side and she use to teach and encourage me to try out new recipes. It’s been years , I made it . Dubai winters are not harsh but the climate is pleasant after long month of summer. So never thought to make this Halwa. So why now? Well I was remembering Ammi too much these days and I went to flashback of my college days. A huge iron Kadai was taken out from the store specially kept for preparing halwas. We had a large family in those days. And whatever halwas or treats were prepared in large quantity to be distributed to everyone. Ammi & Papa had a belief of sharing and eating . From housemaids to relatives. Papa would always ask before tasting . Have you sent it to my uncle & aunts house.
Anyways back to our recipe.This halwa is prepared using Indian gum/ gond ( check above picture in black bowl) which is derived mostly babool tree (acacia family) and can be easily dissolved in liquid. And when fried it become quite crisp. Mostly used to prepare ladoos given to lactation mothers due to its nutrition content. Taseer of gond is hot & thus the reason for it being consumed in winters. This recipe ingredients are easily available. Milk, ghee, nuts, sugar/jaggery along with flavoring of ginger, nutmeg & cardamom are used.

Ingredients
- (I)
- 80-100 gm Gond/Indian edible gum (ground to powder)
- 1 liter fresh milk
- 6 tbsp ghee
- 3/4 cup sugar /jaggery
- (II) (Grind to Powder)
- 10 -12 almonds
- 10 cashew nuts
- 15 walnuts
- small pc of nutmeg
- 2 cardamom seed (remove skin)
- 1/2 tsp ginger powder
- (III)
- 2 tbsp of melon seeds
- 3 tbsp grated coconut
- sliced nuts for garnish
Instructions
- In a heavy bottom pan heat 5 tbsp ghee.
- Once hot, add the powdered gum. Continuously stir on a low flame.
- Keep cooking till it is double in quantity and change in color to light brown.
- Add the milk & stir continuously.In a few minutes milk will start curdling & release the water.
- At this stage increase the heat & cook till 1/4 of water is left
- Now add sugar or jaggery. Cook till it dissolves.
- Add in powdered nuts powder.
- Now add the remaining 1 tbsp of ghee & cook till it leaves the sides of pan.
- Add the melons seed, grated coconut & mix.
- Garnish with sliced nuts and serve.
Notes
Can be stored upto a month in fridge. Warm it & Serve.
