I love Popsicle. And if they are of fruit then it’s a heavenly. I have shared two recipes of popsicle before . Mango & Kiwi. Today the recipe is one of my favorite. As it yells summer. I know, I know summer is nearly over. It’s officially over in Dubai at least . But there is still a lot of humidity in the air. And it’s still hot . Maybe around next month we can talk about winters. Till then let’s enjoy some brightness with this gorgeous looking Minty Plum & Lemon Popsicle
Plum imparts the beautiful bright red color to this popsicle. Sometime after seeing these beautiful colors, I just get eager to try out some dyeing process.It will give a beautiful color the cloth and would be beautiful napkin to use as a prop. Mind of a food stylist. Always thinking about props and color combinations. Hehe.
Chalo let me explain the process to make it now. First we start by removing the pits from plums. I have taken around 12 pitted plums. And one sprig of mint along with stem. One lemon rind and about two tsp of lemon juice. For the sweetener there are two options. Honey or Sugar. Whichever suits your taste. I have used honey. But I have given the measurements for sugar. The quantity of sweetener depends of how sour the plums are. Mine were sweet. So I have not used much of sweetener. But you can always adjust by tasting.

Ingredients
- 12 pitted plums
- 1 sprig mint with stem
- 1 rind of lemon
- 2 tsp lemon juice
- 6 tbsp sidr honey/ 1/3 cup sugar
- 1/8 tsp of salt
- 2 cups water
Instructions
- In a deep pan add pitted plums,mint, water,salt & lemon rind
- Cook till plums are soft and water reduce to half.
- Cool & remove the plum skin & sprig of mint.
- Now add lemon juice & honey.
- With a hand blender churn to mix.
- Pour in popsicle mould & freeze overnight.
- Enjoy.
Notes
For Sugar as a sweetener. Add it while boiling the plums along with flavoring & follow the later procedure.
