Authentic Indian Red Carrot Halwa /Gajar Ka Halwa ,as the name suggest this recipe requires patience to make. For this halwa, indian red carrots are used (Though orange carrots can be used too, but red one has it own unique flavor). This method requires peeling the skin and grating the carrots. Later carrots are sautéed in ghee with the tempering of whole green cardamom and cloves.
Then slow cooked in large kadai with milk. Saffron and crushed cardamom was added to give in more flavor. We sweeten it with ample amount of sugar And lastly almond powder and khoya was added to enhance more of flavor. Ingredients
- 2 kg Red Carrots (peeled & grated)
- 1 liter Milk
- 1/2 cup pure ghee
- 2 cloves
- 2 cardamom
- 400 gm sugar
- 100 gm khoya
- 50 gm almond powder
- 3 cardamom crushed
- ¼ tsp saffron crushed

Nuts to garnish ( almond, raisin, pistachio)
Method
- In a large kadai or a heavy bottom pan heat the entire ghee.
- Once hot add the clove & cardamom
- Add in the grated carrots and saute till it is soft . Around 5 to 6 minutes
- Now add the milk , crushed cardamom, saffron, & almond powder.
- Cook on medium flame till all the milk dries up stirring from time to time. This process will take around one & half hour .
- After the milk has dried up , add the sugar and cook till ghee is visible.
- Add the crumble khoya . Mix and cook for 10 minutes stirring continuously
- Garnish with nuts and serve hot
