Palak Ane Rigna Nu Bhartu/ Smoked Eggplant with Spinach

Palak Ane Rigna Nu Bhartu/ Smoked Eggplant with Spinach is a typical Gujarati dish made in combination of eggplant and spinach.

Each house has a one food item  that adorns their dastarkhan on daily basis. For us our evening meal had kichdi with the pairing of different seasonal  vegetables. With winter , the consumption of green leafy vegetable would increase. And summers would bring yogurt based kadhi.

The recipe of this Palak Ane Rigna Nu Bhartu is similar to the normal bharta. We are only adding palak/ spinach to add more of a flavors. Like more incorporating greens along with another vegetable

Ingredients

(I)

2 big size Eggplant ( Charred on flame, skin removed & crushed lightly)

1 bunch Spinach  washed and finely chopped

4 stalks of green onions chopped

1 tomato chopped

2 green chillies chopped

3-4 tbsp of chopped coriander

3 tbsp oil

(II)

1 tsp red chilly powder

1/2 tsp turmeric powder

1/4 tsp coriander powder

Salt to taste

 

Method

  1. Prepare the eggplant by directly roasting on flame until its charred and soft from inside. Cool & remove the skin. Mash coarsely with hands or spoon
  2. In a pan heat up oil. Add the chopped green onions, tomato all the dry masala (II) .Mix for few minutes
  3. Add mashed eggplant & chopped palak/spinach .
  4. Cook till oil  separates.
  5. Add chopped green chilly & coriander
  6. Serve with roti.
