Rustic chicken curry / Gaurani Chicken Curry, as the name suggest is a village curry. This curry is a concoction of simple available ingredients when ensemble with chicken turning to a delicious , spicy curry.
I was introduced to this Rustic aka Gaurani ( the word means village or completely desi) chicken curry on few of my visits to our village waghda, a small village located in the center of Maharashtra , India. . I am a city girl who had seen the village first time after marriage. My in laws are farmer and cultivate cotton , soya bean as a major crop on their vast lands. Though my in laws live in Amrawati but we have a house there and most of the visits turn into picnic. The working of the farm is mostly undertaken by our caretaker.
And the taste of this curry had stuck with us so much that it has become now one on our weekly menus..A curry whipped up in such a short time is definitely a friend of working women.
A few pointers before going for the recipe. This curry is on made on high flame. So keep all the things ready before starting to make it. Secondly I have used boneless chicken breast cubes about 1 inch to make cooking more fast. Lastly this is a semi dry curry.
Ingredients
(I)
2 tbsp of onion ( roughly chopped small onion)
100 gm coriander with stalks (delicate ones)
3 green chilly
6 garlic cloves
1 inch ginger
5 to 6 black pepper
salt to taste
(II)
5 tbsp groundnut oil.
200 gm Chicken
2 tbsp chopped tomato
1 cup water
(III)
Coriander & Green chillies to serve..
Method
- In a mortar & pestle or food processor roughly crush all ingredients (I) to make masala
- Heat up the oil in pan.
- When hot , add in the prepared masala. Saute for few minutes
- Add the chicken followed by tomato
- Cook for 10 minutes on high flame continuously stirring. Add water from time to time so masala doesn’t stick to bottom.
- Remove & garnish with coriander & green chilly
- Serve hot with roti, naan or kulcha.
