Shami Kebabs are delicious small sized patti / tikki made with mutton mince and yellow lentils. Flavored with different herbs, this little patties are good for serving in parties and for for bun kebabs.
According to food historians , this kebabs were invented in Lucknow by a Nawab who was a foodie. He had lost all this teeth and being a food lover this delicious Shami Kebab were invented. Though there are different version of Shami Kebab from state to state. Sometime this kebab is filled with a mix of onion, chilli & chopped mint & sometimes with a slice of boiled egg. There are many versions where it is coated with eggs and shallow fried,
Today I am sharing the recipe of simple shami kebab made with boneless mutton cubes. Though this kebab can be made with mutton mince too. But due to the fleshy texture , I am using boneless mutton cubes. Mutton mince can be easily substituted for the recipe with same measurements.
For quick cooking, I have used pressure cooker for this recipe. Instant pot can also be used.
Ingredients
(I)
500gm boneless meat cubes
50 gm Chana dal
1tsp shahzeera/Black cumin
1 tsp Garam Masala
5 whole red chilly
1tsp ginger garlic paste.
Salt to taste
1/4 cup water
(II)
1 medium size onion chopped
2 chopped green chilly
3 tbsp chopped coriander leaves
3 tbsp mint leaves chopped
1 tbsp fried onion
(III)
1 pc of coal
Few drops of ghee
- Method:
In a pressure cooker mix all the ingredients (I) with meat and cook for 2-3 whistle. Cool and dry out water if remaining. Grind to paste. - In the kebab mix add chopped onion, coriander leaves, mint leaves , green chili & crushed fried onion . Mix together. Make a hollow in center of the kebab mix
- Heat the coal till flaming red. Put this heated coal in hollow center of kebab mix. Pour few drops of ghee & cover immediately. Keep something heavy on the cover so the smoke doesn’t escape out.
- After 10 minutes remove the coal . Now shape the mix into small kebabs .
- Shallow fry in oil or ghee. Serve with sliced onion, lemon & green chutney

Notes
Can be frozen. Thaw at room temperature & shallow fry.
