Lauki ka Raita / Bottlegourd Raita is a simple side dish made of two ingredient. This easy and simple dish can be paired with plain rice or paratha.
Sometimes the easiest and simplest dishes are so comforting. Lauki Ka Raita is one of them. Though the recipe and procedure to make it is very easy. But it is very close to my heart as this is one of the few dishes my nani taught me. Her recipes were very simple , using the available pantry ingredients. But full in flavor. She always cooked in ghee. When asked about her reason why. Her answer would be the flavors come out beautifully when a dish is cooked in ghee.
For this recipe of Raita, lauki/ ghiya/ bottlegourd used is very tender and thin. Peel and remove the seeds. And pressure cook for few whistles. Drain and add to yougurt. Later give a baghar/temper with spices. And you have the flavorful raita.
Ingredients
100 gm Lauki / Bottlegourd
1 cup water
200 gm yogurt
Salt to taste
1 tsp ghee
1/4 tsp jeera / cumin
2 -3 leaves kari patta
1 whole red chilly
1/2 tsp chopped coriander
Method
- Peel & cut lauki in cubes. Remove the seeded area.
- Pressure cook for 2 to 3 whistles with water. .Remove and cool and crumble with hands.Keep aside
- In a bowl take yogurt and whip a little
- Add the crumbled Lauki to the yogurt
- Add salt, coriander .
- For Baghar/tempering: Heat ghee in a pan. When hot, add cumin, kari patta & red chilly. When it crackles add over the prepared yogurt.
- Mix and serve with rice or hot paratha.
