Broccoli Soup is a mildly flavored soup in indian spices. This delicious soup is my 10 minute recipe and can be served both warm and cold.
Few years back, Broccoli was a foreign vegetable to me. I had no idea how to consume this vegetable. When my ammi was detected with cancer and later my sister, I started my research of boosting immune system and cancer fighting vegetables. At that time I came across this vegetable whom I would just pass off whenever I saw it in supermarket. Now I have started incorporating broccoli in our weekly meals.
The soup which I am sharing today is an Indian twist to this videshi vegetable. K is a desi guy and he will adapt to a particular vegetable only if it is cooked in an Indian way. So this is my little indian fusion to this broccoli soup.
Ingredients
(I)
100 gm Broccolli
1/4 cup water
2 garlic cloves
1 small green chilly
2 to 3 peppercorn
1/2 tsp cumin
salt to taste
(II)
To Serve
Fried Garlic in ghee
Yogurt
Method
- Boil water in a deep vessel.Once it boils add the broccoli florets and blanch for 2 minutes. Remove and cool
- In a blender jar add the broccoli, garlic clove, peppercorn, cumin , chilly and salt. Blend till smooth paste.
- Remove in a bowl.
- Pour over a dollop of whipped yogurt and little bits of fried garlic
- Serve.
