Smoked chicken masala is the flavored curry enhanced with the flavors of charcoal smoke.
Things have been quite busy at my end. Going to office after a month long is quite a work with a loads of adjustment. Sometimes , I think to start working from home base. I am planning towards it and let’s see how things go with time.
I have a list of pictures settled in my drafts and thought to start with a chicken dish as it’s been a long time , I posted any chicken recipe. The recipe of Smoked Chicken Masala , I am sharing today is an altered version of my recipe of Chicken Amravati. To give more flavor to the recipe I have marinated the chicken for an hour and then given a charcoal smoke. Believe me it just elevates the flavor taste of the dish with its smokiness. To make things much easier , I always keep my batch of marinated chicken in my weeks menu to make this dish.

Ingredients
- (I)
- 500 gm chicken
- 1/3 cup onion paste
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1/2 tsp turmeric powder
- 1 tsp red chilly powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala powder
- 3 tbsp yogurt
- 3/4 tsp salt
- 2 green chillies
- 2 tbsp coriander
- (II)
- 3 tbsp oil
- 1 tsp mix of whole garam masala (2 cloves, 3 pepper corns, 1/2" cinammon,1 black cardamom, 1/4 tsp black cumin)
- (III)
- charcoal
- 1/2 tsp ghee
Instructions
- Marinate the chicken for an hour or two with (I) ingredients
- Heat oil in a pan.
- Add the whole garam masala.
- Once it splutters, add the marinated chicken.
- Cook on high flame for a minute.
- Cover and cook on low flame till chicken turns tender and coats the masala. Keep aside when done.
- Heat charcoal directly on flame.
- Add to the prepared chicken and pour over the ghee.
- Cover quickly with the lid so the smoke does not escape from the pan for about 10 minutes.
- Later remove the coal and serve hot with paratha or roti
