Shahi Tukda is an Indian Indian bread pudding dipped in thickened milk infused with flavors of saffron and cardamom.
Shahi Tukda as the name Shahi itself suggest the richness & royalty of this dish. This is an Indian version of the bread pudding. With the addition of nuts and thickened milk, this is more rich version. From time to time, I have made different versions of Shahi Tukda depending on K mood. He loves the crunchiness in his desserts and the original recipe of becomes a soft after some time. On his side shahi tukda is known as Badshah Pasand. I have share the recipe before for Badshah Pasand too. It is bit time consuming but worth all the efforts.
The recipe of begins with the flavoring and thickening of the milk to three fourth. Later thickened milk is spread on the fried bread with a sprinkle of pistachio powder. for two layers . Add lastly we garnish it with silver leaves.

Ingredients
- For the Milk :
- 1 ltr milk
- 1/8 tsp saffron powder
- 1 tsp Cardamom Crushed
- 1/2 tin condense milk (Check Note*)
- For the Bread :
- 8 slices of bread (Sides Removed)
- Pure Ghee for Shallow fry
- For the Garnish :
- Pistachio powder and sliced
- Dried Rose Petals
- Silver leaves (Chandi Ka Varq)
Instructions
- Prepare the milk: In a heavy bottom pan, mix together milk,saffron,cardamom & condense milk. Cook on slow flame stirring from time to time till half in quantity.Cool & Keep aside
- For the Bread: Remove the sides of the bread and shallow Fry in pure ghee till brown and crisp. Keep aside.
- Assemble: In a serving plate, put a piece of fried bread. Pour over the prepared milk on it.Sprinkle pistachio powder. Add another fried bread on the top of it. Pour over the milk. Garnish with sliced pistachio, dried rose & silver leaves.
- Repeat the same process for the other 6 remaining breads with a layering of 2 breads at a time.
- Serve.
Notes
Condense milk can be substituted for sugar. Add 7 tbsp sugar to the milk and reduce to half. The process for reduction will be little more.
