Rose cheesecake with Saffron Pashmak (fairy floss) is a no bake dessert flavored with rose and paired with Persian fairy floss (Pashmak).
Things have been quite on and off since Eid. During Eid prayers, we got the news of sudden demise of close relative. This was sudden shock. On one side we were in grief but on other side the consolation was there, that he didn’t suffer and his death was in the mosque during Eid prayers. This is a third year in a row with two deaths within the span of 2 months each year in our family. It’s strange how we humans try to console ourselves and life moves on with our routine activities. Sometimes , I feel our hearts become so hard that we behave in this way. I don’t know. I have been in this questioning phase from quite some time. And seeking answers. My duas to Allah and his rasool have become quite more for my peace of mind and where we are going on wards. I know it’s difficult from the other side to understand but accepting hard truths of life has become difficult. At the same time , the realities of life become so harsh that the other matters of life seem unsubstantial. The confrontation , arguments seems petty. This blog has been my place where I can ramble my feeling and stress without any hindrance. I thought about taking a break for some time. But the level of stress forces me to return to this place and calms me.
During this month , I have a target to finish off posting recipes on the blog from my Instagram post . Today’s recipe is Rose Cheesecake with Saffron Pashmak. The recipe of cheesecake is my tried and tested recipe. I am making this cheesecake since many years using different flavors. During Ramadan, a friend of K brought some Pashmak from Iran.Well let me clear first what is Pashmak ? It is sugar candy floss, sometime also known as fairy floss. The box had 3 flavors Lemon, Vanilla & Saffron. We love the flavors of saffron . Rose is best paired with saffron. The subtle flavor of rose complements saffron in this recipe. And K is so fond of crunchiness in desserts so these beautiful pashmak were perfect for this delicious no bake dessert. The recipe of Rose Cheesecake with Saffron Pashmak is very easy. Gathering all the required ingredients in a bowl and whisk to form soft peaks. Assembling and tada. It’s ready.
This dessert is best served in parfait glasses. Though I have made it many a times in a bowl to take to a party. I love serving it as individual servings where a person can see the layers till the end.
Ingredients
- 200 gm cream cheese
- 200 gm condense milk
- 1 sachet Dream whip cream powder
- 2 tbsp rose water
- 1/2 tsp beetroot juice or few drops of red color
To serve
- 6 digestive biscuits crushed
- Rose syrup
- Saffron Pashmak ( fairy floss)
- Pistachio flakes
Method
- In a bowl put together all the ingredients and whisk till all is mixed and fluffy
- To assemble: Take 8 to 10 parfait glass.
- Begin by adding crushed biscuits at the bottom about 2 tsp , next layer cream cheese mix
- Top it with pashmak ( fairy floss). Pour over rose syrup and garnish with pistachio flakes.
- Refrigerate until ready to serve
