Bhagare Chawal is rice tempered with variety of whole spices to make the rice more fragrant.
For making Bhagare chawal or tempered rice we need whole spices like cinnamon, cardamom , cloves , bay leaves and peppercorn. You must be wondering where are the spices in the picture. Well I use whole spices in limitations as it has the tendency to overpower the entire dish. Specially rice.
I have also used powdered Garam masala to give an extra doze of fragrance to the rice. This rice is simple to prepare and goes well with any type mutton or chicken curries. Mostly I prepare this rice with Dalcha.

Ingredients
- 2 Cups Basmati Rice
- 4 tbsp Oil
- 4 tbsp Pure Ghee
- 2 tbsp chopped onion
- 2 tsp ginger garlic paste
- 1 tsp yogurt Whipped
- 1/2 tsp garam masala powder
- 2 green chilly
- Salt to taste
- Whole Spice: 2 cloves, 4 peppercorn, 1/2 Inch cinnamon, 1 black cardamom, 1/4 tsp Black Cumin (shahjeera), 1 Bay leaf
- 2 and 1/2 cup water
Instructions
- Wash & soak rice for about 10 minutes.
- In a deep vessel or pressure cooker, heat oil & ghee together.
- Once hot add in the whole spices.
- When the spices crackle, add in chopped onion. Fry till soft and light brown.
- Add in ginger garlic paste. Fry for few minutes
- Add garam masala powder. Stir.
- Remove from flame & add the whipped yogurt.Stir for few seconds.
- Add in rice , water & green chilly.
- Add in the salt.
- Pressure cook till 3 whistles and keep on lowest flame for 10 minutes.
- Serve hot with Dalcha , Chicken / Mutton curry or raita
