.;Life is a theater. People come and go. They play their roles and once done, they move forward. I strongly believe there are reasons that almighty brings some people in your life. He knows you will need their support in the difficult times to come. Sometimes we don’t realize their presence in our life and how they played their part and moved again. But for me this was the second time, I came across such situation. And know how much their presence has influence my life and well being.
I met Vipula ma’am through a friend. A trained yoga teacher full of life and most welcoming face. And a positive attitude. My first thought was, she is so much like Ammi. Full of positivity and a smiling face. My ammi always had a smile on her face. And her daughters genetically got it from her. Whatever the life situation or crisis , face it with a smile and courage was her attitude towards life. Till her last breath , there was a smile on her face. That is how I want to keep her memories. Past these two years life has been rough patch. Loss of both ammi & papa in a year had been too painful. We knew this was destined but letting it go is difficult. Vipula ma’am during this time time supported me a lot. There was a time and still is when breathing becomes difficult. In the silence of the night memories take over and yearning to be near ammi and feel her warmth of her smiles and hugs. Though it’s the way of life and each has to cease but the human nature cannot accept the truth and seek answers .
So this chocolate cake was my little token of gratitude for the support she has given me and to many others too.So on her birthday which coincides with Women’s day ,our class decided to do something special and give her a surprise. Naturally I took the charge of baking the chocolate cake. As few of the classmate were vegans, I decided to bake an eggless chocolate cake so they are not left out in celebrations. I have made two equal size chocolate cakes of the same recipe around 6 ” cake . Frosted the chocolate cakes with whipped cream and chocolate ganache. Decoration was Chocolate pistachios bark and chocolate wafers. I am not a professional baker but a self taught one. So gone with the simplest of chocolate cake and little of fancy. This chocolate cake was loved by all our batch and was devoured with a promise of a baking class for this and other cakes.
I have adapted this recipe from here . But changed a little of measurements to as the batter was quite thick. So was worried about the denseness and moistness. The recipe is simple mixing dry ingredients with wet ingredients. Pouring it over greased pan and bake till done. Baked two equal size chocolate cakes from the below recipe.

Moist and eggless chocolate Cake
Ingredients
- For the cake
- Dry ingredients
- 2 cup flour
- 1 1/2 cup Sugar
- 1 tsp Baking powder
- 2 tsp Baking soda
- 12 tbsp Coco powder
- Wet Ingredients
- 1/2 Cup hot Black coffee ( using 2 1/2 tbsp coffee)
- 1/2 cup + 6 tbsp milk
- 1/2 cup yogurt
- 1 tsp vanilla essence
- For the Chocolate Ganache
- 1/4 cup chocolate chips
- 2 tbsp cream
- 1/2 tsp butter
- For Pistachio Chocolate Bark
- 1/3 cup chocolate chips
- 1 tsp of slice pistachio
- Aluminium foil
- 6 pcs Chocolate Wafers
- 1/3 cup cherries
Instructions
- Pre heat the oven @ 180 degrees for 10 minutes.
- Assemble all the dry ingredients in a bowl.
- In a separate bowl mix all the wet ingredients.
- Now mix together wet & dry mix.
- Pour over the greased pans and bake each pan for about 20 to 25 minutes or till done.
- Remove the pans from oven and cool in the pan itself.
- Microwave for 50 sec, checking every 10 seconds and stirring to form a dripping paste
- Keep aside
- Spread the shiny part of aluminium foil.
- Pour over the melted chocolate chips in an even layer
- Sprinkle pistachio and cool it in fridge to set.
- When set, break into uneven parts for decoration
- Trim the upper part of the cake to even surface.
- On the first cake spread the whipped cream followed by chopped cherries
- Place over the second cake.
- Cover the entire cake with the whipped cream.
- Freeze for about an hour.
- Now remove and pour the chocolate ganache on the edges of the cake.
- With the back of the spoon slide more to give a dripping effect.
- Place the broken pcs of pistachio bark in the middle of the cake.
- Now place the chocolate wafers all over.
- Freeze for about an hour.
Notes
Cakes can be prepare a day in advance. As we are using whipped cream. Cake has to be stored in fridge
