In a muslim household , ginger garlic paste is considered a heart of any salan. The amount used in variety of salans, pulao, biryani varies according to dish. There always a batch for it in our refrigerator. Though I try to use fresh paste, but it’s always handy to have it ready. There are lots of questions around a good ginger garlic paste. Let take it one by one before proceeding to the recipe.
- The quantity of proportion of both the ingredients.
The proportion of ginger & garlic used in this pasted varies from house to house. In my ammi’s home ginger would be used more. While at my in laws, the proportion would be equal. It is totally your preference
- How long can it be stored?
Depends on where you are keeping it. Fridge or freezer. In freezer it can be stocked up to 6 months. I have seen people freezing for about a year too. But for me 2 months has been maximum. Well I don’t make so huge batch. While in refrigerator, I would suggest to use it in 15 days or 20 days max.
- Why does it turn green after some time?
First of all try to use a separate spoon whenever you use this paste. Remove the head of garlic part. That brownish part. Add a little bit of oil to give a bit of texture. And once used, keep it back in fridge. And lastly keep it stored in an airtight container.
- How to store ?
I usually make a batch of 15 days so I keep it fridge. But if want to make a huge batch. Store in different container like for a 10 day usage. And keep it in freezer. Thaw in refrigerator itself. And use as required.

- 500 gm peeled garlic
- 500 gm peeled & cubed ginger
- 4 tbsp unflavored oil
- 1/3 cup
Instructions
- In a mixer jar add all the ingredients.
- Grind to form a paste.
- Remove Store in an airtight container in fridge
