Duliram Ke Pede

 

It’s been  about 6 years in Dubai. And a few years, I  started this blog.  As my main intention of starting was all about documenting my family recipes. I have no idea if I will continue as I am not so regular at it. . I don’t have a proper camera too right now. I see beautiful pics in other blogs and here I am capturing with my basic mobile. K doesn’t know that I have started this blog. Well it’s not about hiding from him. It’s just my ramble most of the time, when I feel homesick. Though I told ammi I started this blog and so and so. Like all mothers she feels so proud. Well she is always proud of all 4 of us in every little venture. That’s another story.

So lets get to today’s recipe of Duliram ke Pede.  This is what it is called in my hometown Vadodara. Any occasion, this was the peda my father bought. These are round brown colored khoya  balls mixed & coated in sugar. . Well for this recipe I tried searching Khoya/mawa here in dubai.  And got to know , Khoya is only available during the time of Diwali. As I was craving to eat this pedas & K also love milk based sweets, I started searching for substitutes.

The process to make Khoya is  very long and I do not have that much patience. Believe me I have made khoya many times in these 4 years. But  I don’t know why it  tastes different from the one back home.  To solve this issue of khoya, I had started using powdered milk (which is available in abundance here ) and condensed milk for lots of my desserts and indian sweets.

First let me explain how you can turn milk powder into khoya in different ways.

  1.  1 cup of milk powder with 2 tbsp of pure ghee and 1/2 tsp milk. Mix and crumble.  It is good for adding to halwas
  2. Brown the milk powder on a very slow flame. Mix in ghee and sprinkle liitle milk. This works pretty well for bar type ( flattened in plate and cut) mithai.
  3. Take 2 cup of milk powder and 3 tbsp ghee. Mix properly. Now take a muslin cloth.  Put this mix in the cloth & make a tight knot. Now steam it for 10 minutes.  Ensure that this cloth does not touch water. Remove and cool. It will form a ball. Crumble , grate & use as required.

Now for this recipe of Duliram ke Pede, we will go for option no 2.

Duliram Ke Pede

Ingredients.

2 cup  milk powder

2 tsp pure ghee

3 tbsp milk or water

1/4 tsp cardamom powder

1/2 cup Sugar Bhurra

1/4 cup Sugar Bhurra for coating.

Method

  • In a nonstick pan add the milk powder and roast on a very low flame until brown. This take about 10  minutes.
  • Now add ghee & mix.
  • Sprinkle milk / water to the mix, and cook for some time.
  • Remove from flame & Cool.
  • Add the Sugar bhurra now & mix
  • Make tight balls about 12 balls.
  • Coat with sugar. & Enjoy.
  • Can be stored about a week at room temperature.
