I remember during summers, lunch was never complete without chaas . Ammi used to prepare chaas with dash of cumin & salt. Though she worked at that time. But there was a always glass of laban on the table along with the lunch. And I have kept my ammi’s tradition here also. Do you know the advantages of buttermilk? Buttermilk is lower in fat & calories than regular milk as all the fat has already been removed from it to make butter.It is rich in protein, calcium & other bone strengthening vitamin.It is also easily digestible than milk.The foremost benefit is it reduces body heat & keeps you cool.Therefore must be consumed in large quantities in summers.
Buttermilk when blended with different spices get different names. It is known as Mattha in Gujarat, Burhani in Maharashtra & Andra pradesh. In northern part of India it is called Lassi. Today sharing with you the recipe of Burhani. You must have read quite a few times the word Burhani on my space in number of post. Well we love it a lot and often make in our daily meals. I had my first taste of burhani after my marriage and I was hooked to it. Well it is a drink packed with full of flavors. And addictive too.
Burhani – makes 1 glass
50 gm yogurt
150 gm buttermilk
1 garlic clove
1/4 tsp cumin
3 tbsp chopped coriander leaves
1 green chili
Salt to taste
Blender to grind

- Burhani — makes 1 glass
- 50 gm yogurt
- 150 gm buttermilk
- 1 garlic clove
- 1/4 tsp cumin
- 3 tbsp chopped coriander leaves
- 1 green chili
- Salt to taste
Instructions
- Grind together curd, green chilly,garlic, cumin powder & salt to form a paste
- Mix with grounded paste with buttermilk
- Serve with Biryani or Pulav.
