Prune cake is a delicious coffee cake. Served with warm caramel sauce & black coffee, you would definitely go for other slice.
The recipe of Prune Cake is based on my recipe of Kaikat al Tamar (ie Dates Cake) and from David Lebovitz Prunes Chocolate cake. I can say for sure once you get the taste of this delicious cake, you would definitely want to go for other slice.
We start the process of making with deseeding the prunes and soaking in concoction of coffee, hot water and soda bi carb. Later this is pureed and added with rest of the ingredients. This recipe is very simple and easy to follow. And takes about fifteen minutes of soaking and about 45 minutes of baking time.
It is best to make ahead this cake as it intensifies the flavor of prunes and later warm and serve with a drizzle of caramel and and black coffee or with a generous scoop of ice cream.

Ingredients

- 3/4 cup Prunes (Deseed & Chopped)
- 3/4 cup boiling water
- 1 tsp coffee granules
- 3/4 tsp Soda Bi Carb

- 3/4 cup self raising flour
- 1 cup + 1/4 cup brown sugar
- 1/2 cup melted butter
- 3 egg
- 1 tsp vanilla extract
- pinch of salt

- Caramel sauce to serve
Instructions
- In a bowl add the chopped prunes. Pour over boiling water, coffee & soda bicarb.Give a quick stir and keep aside for 10 minutes. Later puree it in grinder.
- Preheat the oven at 160°C. Grease an 8 inch tin.
- In a separate bowl mix together eggs, melted butter,brown sugar, vanilla extract and salt
- Now add the self raising flour and mix till combined
- Add in the prunes puree and mix.
- Pour in a greased tin and bake for 40 to 45 minutes until done.
- Cool completely & cut in desired sizes.
- Serve with a drizzle of Caramel sauce.
