I feel baking a cake should be simple and enjoyable. No complicated methods. Just mix everything and pour over in the pan & ready for baking. One of my favorite method of baking a cake is mixing wet ingredients with dry and the batter is ready to get into the oven to bake. I have shared many cake recipes which follow the same method like Figs & Saffron , Chocolate Banana Cake , Chocolate Cupcake ,Eggless Chocolate Cake .
Getting back to our recipe of Oatmeal Banana Cake. This is real simple method. Assemble the dry ingredients in a separate bowl & wet ingredients in a separate bowl. Combine the two to form a uniformed batter . I have used normal breakfast oats and powdered it finely. Nutmeg , coco powder and coffee are added for more flavor. Nutmeg, I love how this spice give a taste to a dish. Sometimes I like it more than vanilla. Oatmeal banana cake is baked at moderate temperature. Over baking tends to make this cake dry. So this cake has to be little under cook. Meaning once the tooth pic inserted comes clean remove the cake from the oven.

Ingredients
- "!Dry Ingredients"
- 1 + 1/2 cup Oatmeal flour
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp nutmeg powder
- 2 tbsp coco powder
- 3/4 cup brown sugar
- 1/2 cup walnuts
- "!Wet Ingredients"
- 1 larges egg
- 1 large banana
- 4 tbsp oil
- 3 tbsp black coffee ( 2 tbsp coffee prepared in 1/2 cup water) /plain warm water
- "!For the chocolate ganache"
- 125 ml cream
- 1 cup chocolate chips
- 1 tbsp butter
- Meringues to decorate
Instructions
- Preheat oven @ 160 degree C
- Grease 8 " pan.
- Assemble all the dry ingredients in a bowl. Mix properly
- In a separate bowl mix wet ingredients.
- Mix wet & dry together.
- Fold to form a uniformed batter.
- Pour on the greased pan & bake for 10 -15 minutes.
- Do the skewer test & cool.
- Once cooled, pour over the prepared ganache.
- Decorate with meringue cookies.
- Slice & serve.

- Heat cream at a very low temperature
- Add in butter followed by chocolate chips.
- Stir for a few seconds & removed from flame
- Stir till the chips are melted
